Our seasonal tasting menus reflect our ongoing exploration of Cebu—its land, its seas, and the stories carried by its ingredients. Rooted in heritage produce, local flavors and culinary culture, our menus evolve with availability, seasonality, and the relationships we maintain with local farmers, foragers, and fishers.
Guided by a modernist and progressive point-of-view, the kitchen approaches cooking as both creation and stewardship. Technique is applied with restraint and intention, allowing ingredients to speak while gently challenging familiar notions of Cebuano food. Each course is shaped by memory, place, and purpose, forming a cohesive narrative rather than a collection of dishes.
